Ingredients:
  • 250g large black olives
  • 250g green olives in brine, drained
  • 20.00 ml fresh thyme leaves
  • 20.00 ml finely shredded lemon rind
  • 18.20 gm olive oil
  • 2 garlic cloves, thinly sliced
  • Freshly ground black pepper
Instructions:
  • In a bowl, mix together olives, thyme, lemon rind, oil, garlic, and pepper. Cover with plastic wrap and refrigerate for 4 hours to let the flavors meld.
