Ingredients:
  • 360g olive
  • 375ml olive oil
  • 2 garlic cloves, thinly sliced
  • 40.00 ml fennel seeds, toasted, lightly crushed
  • 3 fresh bay leaves (see note)
  • 8 dried red chillies
  • Zested rind of 2 oranges
Instructions:
  • After rinsing the olives under cold running water, ensure to dry them thoroughly. Combine oil, garlic, fennel seeds, bay leaves, chilies, and orange zest in a saucepan. Heat gently over low heat for 2 minutes, then allow it to cool slightly.
  • Generously coat the bottom of a clean 2-liter preserving jar with oil. Add the olives, then top off with the remaining oil to ensure the olives are fully submerged. Seal the jar and let it sit in a cool, dark spot for 2-3 weeks for the flavors to meld. Store in the refrigerator for up to 2 months once opened.
