Marmalade bread & butter pudding

Irresistible orange-infused bread pudding.
Ingredients:
  • 2 loaves (or 500g) sourdough bread, crusts removed, roughly torn into 3cm pieces
  • 150g unsalted butter
  • 340g jar blood orange marmalade, melted
  • 2 oranges, plus zest of 1 orange
  • 3 eggs
  • 100g brown sugar
  • 505.00 gm pure (thin) cream
  • 34.40 gm demerara sugar or raw sugar
  • Icing sugar, to serve
Instructions:
  • Preheat the oven to 180°C. Spread the bread evenly in a 30cm x 22cm baking dish and drizzle it with the melted butter.
  • - Gently heat the marmalade in a small saucepan until melted, then drizzle it over the bread. - Peel and segment the oranges, making small, precise cuts to separate each segment over a bowl to catch the juicy flesh.
  • Arrange the orange segments decoratively on the bread.
  • Whisk eggs, sugar, cream, and orange zest until pale, then pour over bread mixture. Sprinkle with demerara sugar and bake for 40 minutes until golden and custard is set. Dust with icing sugar before serving.
