This delightful orange cake is easy to make with affordable pantry staples.
Ingredients:
  • 200 g unsalted butter (at room temperature) plus extra for greasing
  • 4 small oranges
  • 4 tablespoons demerara sugar
  • 200 g golden caster sugar
  • 6 heaped tablespoons fine-cut marmalade
  • 4 large free-range eggs
  • 50 g ground almonds
Instructions:
  • Preheat the oven to 180ºC/gas 4 and grease a 23cm loose-bottomed cake tin. Slice 2 oranges thinly and arrange over the base with demerara sugar. Cream butter and caster sugar, add 3 heaped tbsp marmalade, then eggs. Fold in flour, ground almonds, salt, orange zest, and juice. Pour the batter in the tin and bake for around 50 minutes until golden. Invert the cake onto a plate, prick holes with a skewer, and glaze with warmed marmalade. Serve warm or at room temperature with yoghurt, cream, or ice cream.
