Marmalade glazed lamb

Ingredients:
  • 12 lamb cutlets, trimmed
  • 330.00 gm lime marmalade
  • 42.00 gm reduced-salt soy sauce
  • olive oil cooking spray
  • 1 bunch baby carrots, trimmed
  • 1 bunch baby bok choy, trimmed, halved
Instructions:
  • Arrange the cutlets in a beautiful ceramic dish. Drizzle them with a delicious mix of soy sauce and marmalade. Make sure to coat both sides well. Cover the dish and let it chill in the fridge for 1 hour.
  • Heat a frying pan over medium-high heat and spray with oil. Cook the lamb for 4 minutes on each side, basting with marinade, for a medium doneness.
  • Fill a frying pan halfway with water and bring it to a boil. Drop in the carrots and cook for 2 to 3 minutes until tender. Remove the carrots. Bring the water back to a boil and add the bok choy, cooking for 1 to 2 minutes until wilted.
  • Garnish cutlets with a side of carrots and bok choy.
