Marmalade-glazed lamb

Savor succulent lamb leg marinated in brandy and rosemary.
Ingredients:
  • 2.6kg leg of lamb
  • 330g (1 cup) Orange Marmalade
  • 60ml (1/4 cup) brandy
  • 30.00 ml chopped fresh rosemary
  • 24.40 gm Worcestershire sauce
  • 250ml (1 cup) water
Instructions:
  • Prepare a roasting pan by lining it with baking paper. Score the lamb crossways with a sharp knife, curving the cuts slightly, and then place the lamb in the prepared pan.
  • In a bowl, mix marmalade, brandy, rosemary, and Worcestershire sauce. Pour the mixture over the lamb. Cover with plastic wrap and refrigerate for 4 hours or overnight to marinate.
  • Preheat the oven to 160C. Pour water around the lamb and roast for 2 to 2 hours 15 minutes, basting occasionally with pan juices, until desired doneness. Let the lamb rest for 20 minutes before carving.
