Indulgent ice cream perfect for pairing with chocolate treats.
Ingredients:
  • 300g good-quality marmalade (preferably with shreds)
  • 40ml (2 tbsp) Grand Marnier
  • 300ml thick cream
  • 600ml custard
  • 2 tsp grated orange rind

  • Place Grand Marnier in a saucepan over low heat and stir until the marmalade is melted.
  • Allow to cool until it reaches room temperature.
  • Beat the cream until soft peaks form, then mix in the custard until combined. Gently fold in the orange rind and chill for 30 minutes. Transfer the mixture to a plastic container and freeze until edges are firm.
  • Allow the mixture to thaw slightly, then whip it vigorously with an electric beater until light and airy. Transfer it back to the container and freeze until set.
  • Beat the marmalade mixture into the batter two more times, then freeze until firm. Alternatively, follow the ice-cream machine instructions, adding the marmalade mixture towards the end of churning and continue for 5 more minutes.
