Try Martha Stewart's spooky marshmallow bones with hot cocoa for a chilling Halloween treat.
Ingredients:
  • Cornflour, for dusting
  • 187.50 gm cold water
  • 4.40 gm vanilla extract
  • 9.00 gm powdered gelatine
  • 322.50 gm caster sugar
  • 229.35 gm glucose syrup
  • Icing sugar mixture, for dusting
  • 1 litre milk
  • 53.75 gm caster sugar
  • 150g 70% cocoa dark chocolate, chopped
  • 2 tsp red gel food colouring
Instructions:
  • Prepare the trays by greasing and lining them with baking paper, then generously dust with cornflour. Combine cold water and vanilla in a large heatproof bowl. Sprinkle gelatine over the vanilla mixture and place the bowl over a saucepan of simmering water. Whisk until the gelatine has dissolved.
  • Combine sugar, glucose, and remaining cold water in a saucepan over low heat until the sugar is dissolved. Increase heat to medium-high and bring to a boil. Let it boil without stirring until it reaches 112C to 115C on a candy thermometer, occasionally brushing down the sides of the pan with cold water. Remove from heat.
  • Beat gelatine mixture on high speed in an electric mixer for 30 seconds. Slowly pour in hot sugar syrup while beating continuously. Beat for about 15 minutes until the mixture is fluffy and stiff. Transfer the mixture to a piping bag with a 1cm plain nozzle.
  • Pipe bone shapes, each 8cm long, onto trays lined with parchment paper, spacing them 1.5cm apart. Let them rest uncovered in a cool, dry spot for 10-12 hours.
  • Coat bones generously with icing sugar, ensuring they are fully covered. Remove any extra sugar by gently shaking.
  • To make Blood-red hot chocolate: In a saucepan over medium-high heat, combine milk and sugar and stir until sugar dissolves and it starts to simmer. Remove from heat and stir in chocolate until melted. Finish by whisking in the food coloring.
  • Enjoy a rich cup of hot chocolate with a side of warm cinnamon sugar churros for a delightful and indulgent treat.
