Easy and delicious marshmallow fondant - made with mini marshmallows for a sweet and fun twist on traditional fondant.
Ingredients:
  • 0.25 cup butter
  • 1 (16 ounce) package miniature marshmallows
  • 2 pounds confectioners' sugar, divided
Instructions:
  • Prepare a shallow bowl and place the butter in it, ready for use.
  • In a large microwave-safe bowl, microwave the marshmallows on high for 30 seconds to 1 minute, or until they start to melt.
  • Combine water and vanilla with hot marshmallows and stir gently until smooth. Gradually add confectioners' sugar, 1 cup at a time, until a sticky dough forms. Set aside 1 cup of confectioners' sugar for kneading. The dough will be quite firm.
  • Coat hands with butter and knead the sticky dough until it is smooth and pliable. Place dough on a surface dusted with confectioners' sugar and continue kneading until fondant is smooth and not sticky, 5 to 10 minutes.
  • Shape the fondant into a smooth ball, tightly encase it in plastic wrap, then chill in the refrigerator for 8 hours or overnight.
  • Allow the fondant to reach room temperature and gently roll it out on a flat surface dusted with confectioners' sugar.
