Indulgent mascarpone cupcakes with sweet strawberry glaze.
Ingredients:
  • 1 (18.25 ounce) package moist white cake mix
  • 1 cup water
  • 1 (8 ounce) container mascarpone cheese
  • 0.25 cup vegetable oil
  • 2 egg whites
  • 0.5 cup frozen strawberries, thawed
  • 2.5 cups confectioners' sugar
Instructions:
  • Preheat your oven to 350 degrees F (175 degrees C).
  • Place liners in 12 muffin cups.
  • Combine cake mix, water, mascarpone cheese, vegetable oil, and egg whites in a bowl, stirring until fully mixed.
  • Spoon the cake batter into the greased muffin tin.
  • Bake until golden brown in a preheated oven for around 20 minutes.
  • Puree the strawberries in a food processor or blender until smooth.
  • Combine the smooth strawberries and powdered sugar in a bowl and mix well.
  • Spread a luscious layer of strawberry mixture over the cupcakes.
