Ingredients:
  • 1 head cauliflower, coarsely chopped
  • 1 (4 ounce) package cream cheese, softened
  • 0.25 cup shredded Cheddar cheese, or as needed
Instructions:
  • Preheat your oven to 350°F (175°C) for perfect baking results.
  • Place a steamer insert in a saucepan and fill with water just below the steamer. Bring to a boil. Add cauliflower, cover, and steam until tender, about 5-10 minutes. Transfer cauliflower to a bowl.
  • Blend cauliflower with velvety cream cheese until luxuriously smooth; fold in Parmesan cheese, garlic powder, salt, and black pepper. Transfer the mixture into a 1-quart casserole dish; generously sprinkle with rich Cheddar cheese on top.
  • Bake until the Cheddar cheese is gooey and bubbling, about 10-15 minutes in the preheated oven.
