Caramelized apples and boiled potatoes elevate classic mashed potatoes.
Ingredients:
  • 2 cups water, divided
  • 1 teaspoon brown sugar
  • 1 small lemon, halved and juiced, halves reserved
  • 1 large apple (such as Honey Crisp), peeled and chopped
  • 4 large baking potatoes, peeled and chopped
  • 6 cups water
  • 3 tablespoons butter
  • 3 tablespoons heavy whipping cream
  • 1 tablespoon ground black pepper
Instructions:
  • In a pot, combine 2 cups water, brown sugar, lemon juice, juiced lemon halves, and apple. Bring to a boil over medium-high heat and simmer until apples are tender, about 10-12 minutes. Remove spent lemon halves, drain, and keep apples warm.
  • In a large pot, simmer potatoes in 6 cups of water over medium-high heat until tender, about 15-20 minutes. Drain excess water.
  • Combine and blend potatoes and apples using a ricer or hand mixer.
  • Mix together butter, heavy whipping cream, salt, and ground black pepper into the mashed potatoes and apples. Optionally, keep warm in a 350°F (175°C) oven for up to 20 minutes.
