Tangy Dijon mustard grilled pork chops with applesauce and mashed potatoes.
Ingredients:
  • 6 tablespoons Dijon mustard
  • 6 tablespoons brown sugar
  • 3 tablespoons unsweetened apple juice
  • 3 tablespoons Worcestershire sauce
  • 4 (8 ounce) bone-in pork loin chops
Instructions:
  • Combine mustard, brown sugar, apple juice, and Worcestershire sauce in a bowl until the marinade is smooth. Transfer 2/3 of the marinade to a large resealable plastic bag, add pork chops, coat them with the marinade, remove excess air, and seal the bag. Marinate in the refrigerator for 8 hours to overnight. Cover the bowl with the remaining marinade using plastic wrap, and refrigerate.
  • Take out the pork chops from the marinade and dispose of the bag and marinade.
  • Get the grill ready by preheating it to a medium heat and giving the grate a light coat of oil.
  • Grill the pork chops on high heat, brushing with marinade, until fully cooked, about 4 to 5 minutes on each side. Check for doneness with a meat thermometer - it should register 145 degrees F (63 degrees C). Rest the pork chops for 5 minutes before enjoying.
