Indulge in our creamy, fluffy mashed potatoes with a luxurious touch of sour cream and garlic. This lightened-up twist on a classic dish will have you savoring every irresistibly flavorful bite.
Ingredients:
  • 8 medium russet or Yukon gold potatoes (about 3 lb), peeled, cut into quarters
  • 4 large cloves garlic, peeled
  • 1/3 cup fat-free (skim) milk, heated
  • 1 teaspoon salt
  • 1/8 teaspoon pepper
  • 1/4 cup reduced-fat sour cream
Instructions:
  • In a 3-quart saucepan, combine potatoes and garlic, then cover with water (salted if preferred). Bring to a boil, then simmer covered for 15 to 20 minutes until potatoes are tender. Drain and gently shake the pan over low heat to dry the potatoes.
  • Mash potatoes and garlic until smooth. Gradually add milk, beating well after each addition, until desired fluffy consistency is reached (amount of milk may vary based on type of potatoes).
  • Mix in all the remaining ingredients and vigorously mash until the potatoes are light and fluffy.
