Homemade matzah: Quick, simple unleavened bread perfect for Passover.
Ingredients:
  • 1 teaspoon all-purpose flour for dusting*
  • 1 cup all-purpose flour*
  • 0.33333334326744 cup water, or more if needed
  • 0.5 teaspoon kosher salt, or as needed
  • 1 teaspoon olive oil, or as needed
Instructions:
  • Preheat the oven to a piping hot 475 degrees F (245 degrees C), placing a rack on the top level and heating a sturdy baking sheet inside.
  • Lightly sprinkle 1 teaspoon of flour onto a clean work surface and 1 teaspoon onto a rolling pin, as necessary.
  • In a mixing bowl, add 1 cup of flour. Set a timer for 16 minutes (maximum 18 minutes). Slowly pour water into the flour, 1 tablespoon at a time, stirring with a fork until a rough dough ball forms.
  • Place the dough onto the prepared work surface and knead vigorously until smooth, for about 30 seconds to 1 minute.
  • Take the dough and divide it into 4 equal pieces, then cut each piece in half to get 8 pieces. Swiftly shape each piece into a ball. Roll out each dough ball into a 5-inch round, dusting with flour as needed. Gradually increase the diameter to about 8 inches, allowing the dough to rest briefly before reaching the final size. Aim for thin dough rounds.
  • Gently poke each dough round all over with a fork about 25 times to prevent rising. Flip the dough over and repeat the process, poking each piece 25 times.
  • When there's at least 5 minutes remaining on the timer, carefully take out the hot baking sheet from the preheated oven and place the dough rounds on it.
  • Place the matzah on the top rack in the preheated oven for 2 minutes. Flip it over and continue baking until it becomes lightly browned and crisp, approximately 2 more minutes.
  • - Let the matzah cool on a wire rack. - Lightly brush each matzah with olive oil and generously season with salt.
