Moist and flavorful roasted chicken with a tasty mayo glaze.
Ingredients:
  • 1 (4 pound) whole chicken
  • 1 medium lemon
  • 1 small onion, quartered
  • 1 medium head garlic, halved lengthwise
  • 0.5 cup mayonnaise
  • 1 tablespoon vinegar
  • 1 tablespoon Honey, strained or extracted
  • 2 teaspoons Worcestershire sauce
  • 0.25 teaspoon ground cayenne pepper
  • 1.5 teaspoons kosher salt
  • 1 teaspoon black pepper
Instructions:
  • Preheat your oven to 425 degrees F (220 degrees C), then place a roasting rack inside a rimmed baking sheet. Pat the chicken dry with paper towels.
  • Add the bright and fragrant zest of 1 lemon into a small bowl. Then, quarter the lemon and place the pieces inside the chicken cavity along with the onion and garlic.
  • Combine mayonnaise, vinegar, honey, Worcestershire sauce, cayenne pepper, and lemon zest. Spread this flavorful mixture all over and under the chicken skin. Season generously with salt and pepper.
  • Roast in the oven until no longer pink at the bone and the juices run clear, for 50-60 minutes. Use a thermometer to ensure the thickest part of the thigh reaches 165°F (74°C). Tent with foil halfway through cooking if browning too much. Rest for 10 minutes before serving.
