Savor a flavorful lamb and veggie bowl for a nutritious meal.
Ingredients:
  • 400g desiree potatoes, peeled, chopped
  • 1/2 cauliflower, trimmed, cut into florets
  • 64.38 gm milk
  • 50g butter, chopped
  • 400g Brussels sprouts, halved
  • 1 bunch broccolini, halved lengthways
  • 150g green beans, trimmed
  • 2 large carrots
  • 45.50 gm extra virgin olive oil
  • 8 French-trimmed lamb cutlets
  • 62.50 ml pistachio dukkah
  • 40.00 ml plain flour
  • 510.00 gm salt-reduced beef stock
Instructions:
  • Boil potato and cauliflower in a large pot of salted water until tender, about 10-12 minutes. Drain and return to the pot. Mash until nearly smooth. Mix in milk and 30g of butter. Season with salt and pepper, stir well, and cover to keep warm.
  • Simmer sprouts in boiling water for 2 minutes, then add broccolini and beans. Continue cooking until tender, about 2 more minutes. Drain before serving.
  • Create beautifully spiralized carrot noodles using a vegetable spiralizer. Heat a touch of oil in a large frying pan over medium-high heat. Add the carrot noodles and cook for 2 to 3 minutes, tossing occasionally, until tender. Transfer the carrot noodles to a bowl and cover to keep warm.
  • Massage the lamb with the remaining oil, then generously coat it with the aromatic dukkah mixture. Turn up the heat to high and cook the lamb for 1 to 2 minutes on each side for medium doneness, or adjust to your preferred level of cooking. Place the lamb on a plate and tent it loosely with foil. Let it sit for 5 minutes to allow the flavors to meld together.
  • Afterward, clean the pan. Then, melt the remaining butter over medium-high heat. Add flour and cook while stirring for 1 minute. Gradually pour in the stock, stirring until the mixture is smooth. Bring it to a boil, then lower the heat to medium and simmer for 2 to 3 minutes until slightly thickened.
  • In individual bowls, layer mashed potatoes, vegetables, and cutlets. Pour the savory gravy on top. Serve and enjoy.
