Meatball fattoush recipe

Flatbread meatball fattoush: irresistibly delicious and devoured instantly!
Ingredients:
  • 200g cauliflower, cut into small florets
  • 200g mixed medley tomatoes, halved
  • 2 pieces flatbread
  • 560g pkt Beef & Pork Meatballs
  • 140g yoghurt
  • 21.00 gm lemon juice
  • 1 tsp finely grated lemon rind
  • 24.00 gm tahini
  • 120g Australian Butter Leaf Blend
  • 1 small red onion, halved, thinly sliced
  • 82.50 ml flat-leaf parsley sprigs
Instructions:
  • 1. Preheat your oven to 200°C. 2. Arrange cauliflower in a roasting pan and generously spray with olive oil. 3. Bake for 10 minutes. 4. Add tomatoes to the pan and continue baking for another 10 minutes, or until tomatoes start to soften and collapse.
  • Place the bread on a baking tray and give it a generous spray of olive oil. Bake for 5 minutes, or until beautifully crisp. Then, set it aside to cool.
  • As the bread bakes, transfer the meatballs to a plate and evenly coat with olive oil spray. Heat a large frying pan over medium heat and cook the meatballs, turning occasionally, for 8 minutes or until fully cooked.
  • Combine the yogurt, lemon juice, lemon zest, tahini, and 1 tablespoon of water in a small bowl. Season with salt and pepper to taste.
  • Tear the bread into bite-sized pieces. Place on a large serving platter with salad leaves, onion, cauliflower mixture, and meatballs. Drizzle with yogurt mixture and sprinkle with parsley.
