Festive summer granita - a crowd-pleasing, budget-friendly dessert for any occasion.
Ingredients:
  • 1 large (about 2kg) honeydew melon, peeled, de-seeded, cubed
  • 12.00 gm icing sugar
  • 21.00 gm fresh lime juice
  • Lime wedges, to serve.
Instructions:
  • Combine ripe honeydew melon, sweet icing sugar, and tangy lime juice in a food processor or blender and blend until silky smooth.
  • Transfer the mixture into a shallow stainless steel tray and freeze for 3 hours until partially set. Use a fork to break up ice crystals, then freeze for another 3-4 hours until fully set. Break into ice crystals using a fork, spoon into glasses, and serve with lime wedges.
