Melted snowmen biscuits

Try making adorable melted snowmen cookies for a fun and tasty treat!
Ingredients:
  • 375g plain flour
  • 2.00 gm baking powder
  • 1.20 gm salt
  • 175g butter, softened
  • 165g caster sugar
  • 4.40 gm vanilla extract
  • 1 Free Range Egg
  • 160g icing sugar mixture
  • 30.90 gm milk
  • Snake lollies, to decorate
  • 24 white marshmallows
  • Dark chocolate writing icing, to decorate
  • 2 x 120g pkts M&M’s Minis
Instructions:
  • In a bowl, sift together White Wings Premium All Purpose Plain Flour, baking powder, and salt. In a separate bowl, beat butter and caster sugar with an electric mixer for 5 minutes until pale and creamy. Mix in vanilla and egg, then stir in the flour mixture.
  • Transfer the dough onto a lightly floured surface, knead for 1 minute until smooth. Divide the dough into 2 portions, shape each portion into a disc, wrap them in plastic wrap, and chill in the fridge for 30 minutes.
  • Preheat your oven to 180C and place baking paper on 2 trays.
  • Roll out the pastry disc to a 5mm thickness between 2 sheets of baking paper. Use a 7cm round pastry cutter to cut out 12 discs from the dough, re-rolling any trimmings if needed. Place the discs 3cm apart on the lined trays and bake for 12-15 minutes or until lightly golden. Allow them to cool. Repeat the process with the remaining dough to yield 24 biscuits.
  • Sift the icing sugar into a bowl, then mix in milk until you achieve a thick, spreadable consistency. Spread the icing over the cooled biscuits, ensuring it reaches the edges to create a smooth finish.
  • Cut 24 small triangles from an orange snake lolly to make the noses. Dip the bases in icing and attach to the sides of the marshmallows. Pipe eyes and mouths using writing icing on the marshmallows. Press marshmallow heads onto iced biscuits. Cut heads from snake lollies and cut down the length to make two thin pieces. Wrap the pieces around marshmallow heads to create scarves.
  • Create a row of red and green M&M’s Minis in the center of the biscuits to make buttons. Then, use the writing icing to pipe arms on each biscuit. Store in an airtight container for up to a week.
