Delight and entertain kids with cute meringue chick cupcakes for Easter fun!
Ingredients:
  • 340g packet butter cake mix (see notes)
  • 169.95 gm milk
  • 60g butter, melted
  • 2 egg whites
  • 107.50 gm Caster Sugar
  • Pinch of cream of tartar
  • Yellow gel food colouring
  • Red and yellow star sprinkles (see notes), to decorate
  • Red candy hearts, to decorate
  • Blue 100’s and 1000’s, to decorate
  • 125g unsalted butter, softened
  • 225.00 gm icing sugar mixture
  • 10.40 gm milk
  • Green gel food colouring
Instructions:
  • Preheat your oven to 120C/100C fan-forced. Grease 2 large baking trays and line them with baking paper. With an electric mixer, beat egg whites, caster sugar, and cream of tartar for 8 to 10 minutes until the meringue is thick, glossy, and the sugar has dissolved. Add a few drops of food coloring to turn the meringue a cheerful yellow.
  • Fill the piping bag fitted with a 1cm plain nozzle with meringue mixture. Pipe mounds, about 3cm wide, onto trays, then pipe smaller mounds on top, about 2cm wide. Place 2 red star sprinkles at the base of each mound for feet, 2 yellow star sprinkles on the sides for wings, press candy hearts for beaks, and blue 100’s and 1000’s for eyes. Bake for 45 to 55 minutes until meringues are firm but not browned. Allow meringues to cool in the slightly open oven for 1 hour before removing.
  • Preheat the oven to 180C/160C fan-forced and prepare a 12-hole muffin pan with paper cases.
  • Prepare the cake mix according to the packet instructions using milk, eggs, and butter. Distribute the mixture evenly among the greased pan cavities.
  • Prepare the Buttercream: With an electric mixer, whip the butter for 5 minutes until light and fluffy. Gradually blend in the icing sugar until fully incorporated. Mix in the milk until well combined. Tint the mixture a soft green using food coloring. Transfer the buttercream to a piping bag with a 1cm fluted nozzle.
  • Frost each cupcake with green buttercream and top with a cute meringue chick before serving.
