Mexican beef and black bean burgers

Satisfying Mexican beef burgers with spicy black bean chili sauce, perfect for a hands-on meal paired with crispy hot chips.
Ingredients:
  • 600g beef mince
  • 425g can black beans, drained, roughly mashed
  • 2 garlic cloves, crushed
  • 41.60 gm hot chilli sauce
  • 125.00 ml fresh breadcrumbs
  • 2 large red onions, sliced into thick rounds
  • 1 gem lettuce, leaves separated
  • 2 tomatoes, sliced
  • 6 brioche buns, toasted, split
  • 125.00 ml fresh coriander sprigs
  • 600g frozen crinkle-cut fries, cooked, to serve
  • 260g jar chargrilled capsicum, drained
  • 40.00 gm crème fraîche
  • 40.00 ml roughly chopped fresh coriander
Instructions:
  • In a large bowl, combine mince, beans, garlic, chili sauce, and breadcrumbs. Season generously with salt and pepper. Mix thoroughly using your hands. Divide the mixture into 6 equal portions and shape each into a thick patty. Place the patties on a plate, cover, and refrigerate for 30 minutes before cooking.
  • Prepare the Capsicum Sauce by blending capsicum until almost smooth in a blender. Add crème fraîche and coriander, then blend until well combined. Season with salt and pepper, transfer the sauce to a bowl, cover, and refrigerate until needed.
  • Preheat a barbecue grill or chargrill pan over medium heat. Grill patties and onion rounds for 5 to 6 minutes on each side, or until patties are browned and cooked through, and the onion is charred and tender.
  • Start by creating a colorful and flavorful stack on the bottom half of the roll with lettuce and tomato, then add the patties, onion, capsicum sauce, and fresh coriander sprigs. Finally, crown the masterpiece with the top of the roll. Accompany with fries and extra capsicum sauce on the side for a complete meal.
