Spicy tomato-rubbed baked chicken wings served with fresh salsa for a Buffalo-Mexico fusion flavor.
Ingredients:
  • 2 tablespoons tomato sauce
  • 2 tablespoons coconut sugar
  • 2 tablespoons cayenne pepper
  • 1 tablespoon chili sauce
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 1 teaspoon ground black pepper
  • salt to taste
  • 15 chicken wings
  • 3 medium tomatoes, diced
  • 1 small yellow onion, diced
  • 1 small red onion, diced
  • 0.5 cup chopped fresh cilantro
  • 1 tablespoon minced jalapeno pepper
  • 1 pinch white sugar
Instructions:
  • Combine tomato sauce, coconut sugar, cayenne, chili sauce, cumin, coriander, pepper, and salt in a large bowl. Add chicken wings and toss well to coat. Refrigerate for 20 minutes to marinate.
  • Preheat your oven to 425°F (220°C). Prepare a baking sheet by lining it with aluminum foil and placing an oven-proof wire rack on top. Arrange the marinated wings on the rack.
  • Roast the wings in the preheated oven until they are golden brown and crispy, approximately 20 minutes.
  • Mix together fresh tomatoes, crisp onions, aromatic cilantro, zesty lemon juice, spicy jalapeno, sweet sugar, and a dash of salt in a bowl to create a vibrant salsa.
  • Place the chicken wings onto a spacious plate and generously drizzle with salsa.
