Mexican cheese sauce recipe

Whip up a zesty Mexican cheese sauce in 15 minutes for a burst of flavor.
Ingredients:
  • 30g butter
  • 30.00 ml plain flour
  • 193.13 gm milk
  • 100g cheddar, coarsely grated
  • 62.50 ml finely grated parmesan
  • 1/2 tsp Mexican chilli powder, plus extra to serve
Instructions:
  • In a saucepan over medium-high heat, melt butter until bubbling. Stir in flour and cook for 1 minute. Gradually add milk and bring to boil. Reduce heat to medium and cook for 2 minutes until mixture thickens.
  • Gradually incorporate the 1/4 cup of cheddar, whisking until smooth. Repeat with additional 1/4 cup increments of cheddar, ensuring each addition is melted and smooth. Mix in the parmesan and chilli powder. Season with salt and pepper. Serve the sauce promptly, garnished with extra chilli powder.
