Cheesy Mexican beef casserole with golden cornbread stuffing for irresistible flavor.
Ingredients:
  • 1 pound ground beef
  • 1 small onion, finely chopped
  • 1.5 cups water
  • 0.25 cup salted butter
  • 1 (6 ounce) package cornbread stuffing mix (such as Stove Top®)
  • 1 (14.5 ounce) can diced tomatoes with jalapeno
  • 1 (10 ounce) can diced tomatoes with green chile peppers
  • 1 teaspoon ground cumin
  • 0.5 teaspoon hot pepper sauce (such as Tabasco®), or more to taste
  • 1 (8.75 ounce) can sweet corn, drained
  • 1 cup shredded Cheddar cheese
Instructions:
  • Preheat your oven to a toasty 375 degrees F (190 degrees C).
  • In a hot skillet, brown and crumble ground beef with onion until beef is cooked through, about 5-7 minutes. Discard excess grease.
  • While the beef is cooking, prepare the stuffing by bringing water and butter to a boil in a saucepan. Add stuffing mix, cover, and remove from heat. Allow it to sit for 5 minutes before fluffing with a fork.
  • Combine both cans of diced tomatoes, chili powder, cumin, and hot sauce into the beef mixture and simmer for 2 minutes. Stir in corn and Cheddar cheese, simmering until the cheese is completely melted, about 1 minute. Transfer the mixture to a casserole dish and evenly spread cornbread stuffing on top.
  • Bake until golden brown in the preheated oven, about 20-30 minutes.
