Delicious pulled pork tacos with coleslaw, tomato, coriander, and sour cream - a crowd-pleasing family meal!
Ingredients:
  • 1.8kg Pork Forequarter Roast
  • 40g pkt fajita seasoning
  • 1 red onion, coarsely chopped
  • 4 garlic cloves, coarsely chopped
  • 1l chicken stock
  • 3 sprigs oregano
  • 12 large tortillas
  • 400g pkt Fresh Coleslaw Supreme
  • 2 tomatoes, finely chopped
  • Coriander leaves, to serve
  • Sour cream, to serve
  • Lime wedges, to serve
Instructions:
  • Preheat the oven to 150C. Remove the pork rind and discard it. Tie the pork with kitchen string, then rub seasoning all over to coat. Heat half of the oil in a large heavy-based saucepan over medium heat. Cook the pork for 5 minutes until browned all over, ensuring not to burn the seasoning. Transfer the pork to a plate.
  • Clean the pan and heat the remaining oil over medium heat. Sauté the onion for 5 minutes until softened, then add the garlic and cook for 2 minutes until aromatic. Pour in the stock, sprinkle in the oregano, and bring to a boil. Return the pork to the pan, cover, and bake for 2 ½ hours or until the pork is cooked through and tender.
  • Place the pork on a plate, keeping the braising liquid aside, and allow it to cool for 20 minutes. Use two forks to shred the meat. Transfer the shredded pork to a bowl and mix in a bit of the reserved braising liquid to keep it moist.
  • Warm tortillas as instructed on package. Place tortillas on individual plates. Top with coleslaw, pork, tomato, coriander, and sour cream. Fold to close like a wrap. Serve with lime wedges.
