Michela’s beef, sweet potato and ricotta

Ingredients:
  • 1 large sweet potato (300g)
  • 200 g quality minced beef
  • 2 tablespoons ricotta cheese
  • extra virgin olive oil
  • 2 sprigs of fresh thyme optional
Instructions:
  • Peel and dice the sweet potato into 1cm chunks. Place a pan over medium heat and add 2cm of water. Set up a steamer basket over the pan. Add the beef and sweet potato to the steamer, cover, and steam for 10 to 15 minutes until cooked. Blend the cooked mixture with ricotta and a drizzle of oil until smooth, adjusting consistency with water if needed. Garnish with thyme before serving.
