Quick and tasty microwave baked potato recipe for a time-saving twist on a classic favorite.
Ingredients:
  • 1 large (10 to 12-ounce) russet potato
  • 1 teaspoon olive oil, optional
  • Pinch of kosher salt, optional
  • Optional toppings:
  • 1 tablespoon butter
  • 1/4 cup shredded cheddar cheese
  • 1 tablespoon sour cream
  • 1 teaspoon minced chives
  • Salt and pepper, to taste
Instructions:
  • To ensure a crispy skin on your baked potato, preheat the oven to 450°F, thoroughly scrub the potato, dry it off, and pierce it a few times all over with a fork.
  • Microwave the potato: Place the potato on a microwave-safe plate. Microwave for 10 minutes, flipping halfway through, until soft. Check by pressing gently with your thumb or piercing with a fork. Microwave for 1-2 minutes more if needed.
  • To achieve a crispy and salty skin on the potato, coat it evenly with olive oil and sprinkle with salt. Bake for about 10 minutes until the skin is cracking and crispy. Enjoy!
