Microwave chocolate brownie with almost-instant caramel sauce

Whip up this quick and irresistible microwave dessert for a seamless dinner party finale!
Ingredients:
  • 125g butter, chopped
  • 100g dark cooking chocolate, chopped
  • 140g (2/3 cup) caster sugar
  • 4.40 gm vanilla extract
  • 75g (1/2 cup) plain flour
  • 35g (1/4 cup) cocoa powder
  • 65 g (1/3 cup) dark chocolate chips
  • Vanilla ice-cream, to serve
  • 395g can sweetened condensed milk
  • 32.00 gm dark brown sugar
  • 2.20 gm vanilla extract
Instructions:
  • Prepare the 20cm square microwave-safe dish by lining its base with non-stick baking paper. Melt the butter and chocolate in a small microwave-safe bowl using the MELT cycle, stirring until smooth. Let it cool slightly.
  • Combine beaten eggs, sugar, and aromatic vanilla in a bowl until smooth. Sieve flour and cocoa in a separate large bowl. Mix melted chocolate and egg mix into the flour mixture until blended. Fold in chocolate chips. Pour into lined dish and level the top.
  • Cook in the microwave on high for 4-5 minutes until the top is firm and a skewer inserted into the center comes out with crumbs. Let it cool in the pan.
  • To prepare the caramel sauce, pour condensed milk into a microwave-safe bowl. Microwave on high for 1 minute. Whisk until smooth (caution: it will be very hot). Microwave on medium, stirring every minute, for 4 minutes or until a light caramel color forms. Remove from microwave, add sugar, and stir until dissolved. Mix in vanilla and 60ml (1/4 cup) of water until combined. Allow to cool for 10 minutes before using.
  • Cut the warm brownies into slices and enjoy with a scoop of ice cream and drizzle of caramel sauce.
