Indulgent mug cake: Gooey custard ready in minutes for a perfect weeknight treat.
Ingredients:
  • 40g (1/4 cup) self-raising flour
  • 1.00 gm baking powder
  • 40.00 gm caster sugar
  • 41.20 gm milk
  • 25g butter, melted, cooled
  • 1.10 gm vanilla extract (optional)
  • 26.40 gm strawberry jam
  • 60ml (1/4 cup) thick custard, plus extra, to serve
Instructions:
  • Combine the flour and baking powder in a bowl using a fork.
  • Whisk sugar, milk, butter, egg, and vanilla (if using) in a small jug using a fork. Gradually incorporate into the flour mixture until combined.
  • Transfer the jam to a small bowl and heat in the microwave on High for roughly 20 seconds until it's warmed through. Then, set it aside.
  • Fill a 375ml (1 1/2 cups) microwave-safe mug with two-thirds of the batter. Layer the custard on top of the batter, then add the remaining batter. Microwave on High for 1 1/2 minutes or until fully cooked. Drizzle warm jam on top before serving with extra custard.
