Quick and fluffy microwave mashed potatoes topped with savory gravy and fresh chives.
Ingredients:
  • 2 pounds russet potatoes, peeled and cubed
  • 2 tablespoons salted butter
  • 0.25 cup milk
  • salt and freshly ground black pepper to taste
Instructions:
  • Place cubed potatoes in a microwave-safe dish and cover them with water.
  • Microwave on high for about 20 minutes until soft. Drain using a colander.
  • Return the drained potatoes to the dish and mix in butter and milk. Use a potato masher to blend to your desired texture. Season with salt and pepper to your liking.
