Tasty mini-muffins for snacking on the go!
Ingredients:
  • 225g self-raising flour
  • 1.25 gm bicarbonate of soda
  • 100g brown sugar
  • 125ml banana
  • 80ml vegetable oil
  • 1 egg, lightly whisked
  • 185ml milk
  • 125g light cream cheese, softened
  • 24.00 gm icing sugar mixture
  • 1 tsp finely grated lemon rind
Instructions:
  • 1. Preheat your oven to 180°C. 2. Grease a muffin pan with a 1/3-cup capacity. 3. In a bowl, mix flour, bicarbonate of soda, and sugar together. 4. Create a well in the center of the dry ingredients. 5. In a jug, combine mashed banana, oil, egg, and milk. 6. Pour the wet mixture into the well and stir gently until just combined.
  • Divide the mixture evenly into the muffin holes. Bake for 15 minutes, or until a skewer inserted in the center comes out clean. Allow them to cool after removing from oven.
  • In a small bowl, use an electric mixer to whip cream cheese, icing sugar, and lemon rind until fluffy. Spread a dollop of the cream cheese mixture on top of each muffin.
