Indulge in mini banana pudding bites made with vanilla wafer crumbs, baked in mini muffin pans.
Ingredients:
  • 1.5 cups vanilla wafer crumbs
  • 0.25 cup white sugar
  • 6 tablespoons unsalted butter, melted
  • 1 pinch salt
  • 0.5 (3.4 ounce) package instant vanilla pudding mix
  • 1 cup cold milk
  • 0.25 teaspoon vanilla extract
  • 1 sliced fresh banana
Instructions:
  • Preheat the oven to 350 degrees F (175 degrees C) and prepare two mini muffin pans, each with a 12-cup capacity.
  • Mix together vanilla wafer crumbs, sugar, melted butter, and salt in a bowl until fully combined using a fork.
  • Spoon 1 tablespoon of the delicious crumb mixture into each mini muffin cup, gently pressing it onto the bottom and up the sides of each cup with care.
  • Bake in the preheated oven for 10 minutes until the crusts are set. Allow muffin pans to cool on a wire rack for 30 minutes until completely cooled.
  • In a bowl, mix instant vanilla pudding mix, milk, and vanilla extract until thickened, about 4 minutes. Spoon evenly into 24 mini muffin cups. Top each pudding bite with a banana slice and chill in the refrigerator for about 20 minutes.
