Delightful mini quiches with healthy bread crust - perfect for a winning lunchbox treat!
Ingredients:
  • 12 slices High Fibre Low GI White Sandwich Bread*, crusts removed
  • 100g zucchini, coarsely grated
  • 30g cheddar cheese
  • 2 rashers rindless bacon, finely chopped
  • 20.00 ml chopped chives
  • 3 Free Range Eggs, lightly whisked
  • 20.60 gm milk
Instructions:
  • Preheat the oven to 180°C. Grease 6 holes of a 1/3-cup (80ml) muffin pan. Place a slice of bread on a clean work surface. Arrange another slice of bread on top at a 45-degree angle. Roll out the bread slices with a rolling pin until they are 5mm thick. Repeat with the remaining bread slices. Line the greased muffin pan holes with the flattened bread, pressing down firmly, and then spray with olive oil. Bake for 15 minutes or until just golden.
  • In a bowl, mix zucchini, cheddar, bacon, and chives. Fill the bread cases evenly with the mixture. Whisk the egg and milk in a jug, then pour it evenly over the zucchini mixture. Season with your favorite spices. Bake for 20-25 mins until the egg is lightly golden and set. Allow it to cool slightly before serving warm or at room temperature.
