Combine beloved desserts for a festive treat.
Ingredients:
  • 200g digestive biscuits
  • 120g unsalted butter, melted
  • 250g cream cheese
  • 200g creme fraiche
  • 75g icing sugar
  • 100ml thickened cream, whipped
  • 125.00 ml sweetened dried cranberries (Craisins)
  • 40.00 ml brandy
  • 410g jar fruit mince
Instructions:
  • Prepare the muffin pan by lining it with plastic wrap. Use a food processor to finely crush the biscuits. Add butter and process until mixed. Press the biscuit mixture firmly into the base and sides of each muffin hole. Chill the pan in the freezer as you work on the filling.
  • In the bowl of an electric mixer, blend cream cheese, creme fraiche, sugar, and vanilla until creamy.
  • Using a metal spoon, gently incorporate the whipped cream. Spoon the filling into the muffin pan. Freeze for an additional 30 minutes.
  • In a saucepan over low heat, gently warm cranberries and brandy for 2-3 minutes until the fruit plumps. Then, stir in the mince and warm through for another 3 minutes. Remove from heat.
  • Carefully take the cakes out of the pan and enjoy with a delicious fruit mince topping.
