Easy-to-make mini meatloaves, perfect for a quick and delicious dinner!
Ingredients:
  • 500g lamb mince
  • 125.00 ml fresh breadcrumbs
  • 1 egg
  • 1 onion, grated
  • 1 small zucchini, grated
  • 62.50 ml pine nuts, toasted
  • 40.00 ml parsley, chopped
  • 24.40 gm Worcestershire sauce
  • 2 tsp thyme leaves, chopped
  • 200g mozzarella
  • 275.00 gm tomato pasta sauce
  • Rocket leaves, to serve
  • Oven baked chips, to serve
Instructions:
  • Preheat the oven to a toasty 200C.
  • Mix together ground meat, breadcrumbs, egg, onion, zucchini, pine nuts, parsley, sauce, and thyme in a big bowl. Add salt and pepper for flavor. Shape the mixture into 4 oval meatloaves.
  • Cut half of the mozzarella cheese into 8 cubes and grate the remaining cheese. Press 2 cheese cubes into the center of each meatloaf, reshape, and place in a baking dish.
  • Bake until golden brown, then top with pasta sauce and sprinkle with cheese.
  • Continue baking for an additional 5-10 minutes until fully cooked and the cheese is gooey. Serve alongside arugula and fries.
