Kids will love making and devouring these mini meatloaves.
Ingredients:
  • 2 small carrots, peeled
  • 1 small zucchini
  • 550g lean beef mince
  • 70g (1 cup) breadcrumbs made from day-old bread
  • 1/2 small brown onion, coarsely grated
  • 55g (1/3 cup) frozen peas
  • 50.00 gm tomato chutney
  • 1 egg, lightly whisked
  • Mashed potato, to serve
  • Tomato sauce, to serve
Instructions:
  • Preheat the oven to 210°C.
  • Grate the carrots and zucchini using the coarse side of a grater, then squeeze out excess liquid. Combine them in a bowl with beef mince, breadcrumbs, onion, peas, tomato chutney, and egg. Mix well using your hands.
  • Evenly distribute mixture among 12 medium muffin pans (125ml/1/2-cup each), press firmly into each pan, and smooth the tops.
  • Bake in a hot oven for 20 minutes until golden brown and fully cooked. Then, take them out of the pans and serve alongside the mashed potatoes and tomato sauce.
