Rich and fudgy chocolate mint brownies with chunks of semisweet chocolate for a delightful twist.
Ingredients:
  • 0.75 cup unsifted all-purpose flour
  • 0.25 teaspoon baking soda
  • 0.33333334326744 cup unsalted butter
  • 2 tablespoons water
  • 1 teaspoon mint extract
  • 2 large eggs
  • 12 (1 ounce) squares semisweet chocolate, cut into 1/2-inch chunks
Instructions:
  • Preheat your oven to a toasty 325 degrees F (165 degrees C) and slick a 9-inch square baking pan with grease.
  • In a medium bowl, mix together the flour, baking soda, and salt.
  • In a pot over medium heat, mix sugar, butter, and water until boiling. Take the pot off the heat and stir in half of the semisweet chocolate, vanilla extract, and mint extract until smooth and chocolate is melted. Pour the mixture into a large bowl and let it cool for 10 minutes before using.
  • Beat in the eggs one by one into the chocolate mixture, ensuring each is well incorporated. Gradually add the flour mixture and mix until smooth. Gently fold in the rest of the chocolate. Spread the batter into the baking pan.
  • Bake in the preheated oven for around 30 minutes until the top is dry and the edges are slightly pulling away from the sides of the pan. Allow to cool completely before slicing.
