Asian-inspired miso marinated skirt steak grilled to tender perfection.
Ingredients:
  • 3 tablespoons red wine vinegar
  • 2 tablespoons yellow miso paste
  • 1 tablespoon packed brown sugar
  • 0.125 teaspoon cayenne pepper
  • 2 cloves garlic, finely minced
  • 1 (1 1/2-pound) skirt steak, cut into 4 pieces
  • freshly ground black pepper to taste
Instructions:
  • Mix together vinegar, miso paste, brown sugar, cayenne pepper, and garlic in a small bowl until well blended.
  • Coat skirt steaks liberally with miso mixture on both sides and season with black pepper. Rest at room temperature for around 30 minutes.
  • Preheat a charcoal grill to medium-high heat. Grill the steak without moving for 2 minutes. Rotate the steak 180 degrees for a diamond grill mark pattern and grill for another 2 minutes. Flip the steak and cook until it reaches medium-rare to medium doneness, approximately 4 more minutes. The exterior should have a shiny finish. Use an instant-read thermometer to ensure the center reaches 135 degrees F (57 degrees C). Let the steak rest for 5 minutes before serving.
