Year-round berry crisp with buttery oat topping using frozen mixed berries.
Ingredients:
  • 2 (16 ounce) packages frozen mixed berries
  • 0.25 cup white sugar
  • 0.25 cup brown sugar
  • 2 teaspoons cornstarch
  • 1 teaspoon lemon juice
  • 0.5 teaspoon ground cinnamon
  • 1 cup all-purpose flour
  • 1 teaspoon baking powder
  • 0.5 cup cold butter, cut into cubes
  • 2 cups rolled oats
  • 1 cup brown sugar
  • 1 teaspoon ground cinnamon
  • 1.5 cups cold butter, cut into pieces
Instructions:
  • Preheat the oven to 425 degrees F (220 degrees C) and lightly grease a 9x13-inch baking dish.
  • In a bowl, combine berries, 1/4 cup white sugar, 1/4 cup brown sugar, cornstarch, lemon juice, and 1/2 teaspoon ground cinnamon until evenly mixed. Transfer the filling to an ungreased baking dish.
  • Bake the filling in the preheated oven until the berries are warm, for approximately 10 minutes.
  • Combine flour, 1/4 cup white sugar, 1/4 cup brown sugar, baking powder, and salt in a bowl. Use a pastry blender to cut in 1/2 cup cold butter until crumbly. Press the crust mixture evenly onto the bottom of a 9x13-inch baking dish and pour the hot berry filling on top.
  • Combine oats, 1 cup flour, 1 cup brown sugar, and 1 teaspoon ground cinnamon in a bowl to make the topping. Use a pastry blender to cut in 1 1/2 cups cold butter until crumbly. Sprinkle the topping over the berry filling.
  • Bake in the oven until the filling bubbles and the topping is golden brown, approximately 35 minutes.
