Mixed-Berry Cream Tart

Indulge in crispy granola bar tarts with creamy cheese and fresh berries.
Ingredients:
  • 2 cups sliced fresh strawberries
  • 1/2 cup boiling water
  • 1 Jell-O™ gelatin strawberry sugar free
  • 3 pouches (1.5 oz each) Nature Valley™ roasted almond crunchy granola bars (from 8.9-oz box)
  • 1 package (8 oz) fat-free cream cheese
  • 1/4 cup sugar
  • 1/4 teaspoon almond extract
  • 1 cup fresh blueberries
  • 1 cup fresh raspberries
  • Fat-free whipped topping, if desired
Instructions:
  • Crush 1 cup of strawberries in a small bowl using a pastry blender or fork, and set aside the remaining 1 cup of strawberries.
  • Pour boiling water over gelatin in a medium bowl and stir for about 2 minutes until gelatin is completely dissolved. Mix in crushed strawberries and refrigerate for 20 minutes.
  • While the granola bars are still in their pouches, use a rolling pin to crush them. Sprinkle the crushed granola at the bottom of a 9-inch ungreased glass pie plate, pressing the crumbs up the sides to form a crust.
  • Combine cream cheese, sugar, and almond extract in a small bowl. Use an electric mixer on medium-high speed to beat the mixture until smooth. Spoon the mixture over the crushed granola and gently spread it to cover the bottom of the crust.
  • Gently combine blueberries, raspberries, and the remaining cup of strawberries with the gelatin mixture. Spoon over the cream cheese layer. Chill for about 3 hours until set. Serve with a dollop of whipped topping on top.
