Mixed berry tarts

Indulge in a refreshing summer berry tart for the perfect dessert!
Ingredients:
  • 1 sheet reduced-fat shortcrust pastry, thawed
  • 75g light cream cheese
  • 20.00 gm caster sugar
  • 10.00 gm almond meal
  • 1/2 tsp coconut essence
  • 1 punnet raspberries
  • 1 punnet blueberries
  • 37.50 gm icing sugar
  • 21.00 gm lemon juice
Instructions:
  • Preheat your oven to 200C for conventional or 180C for fan-forced. Place an oven tray in the preheating oven.
  • Cut the pastry into four squares and gently press each square into a tart tin. Arrange the tins on a baking tray and bake in the oven for about 15 minutes until the pastry turns a lovely golden color. Allow the tart shells to cool before filling.
  • Mix together cream cheese, sugar, almond meal, and essence in a bowl.
  • Combine icing sugar and lemon juice until you achieve a smooth, pourable icing.
  • Spoon the luscious cream cheese mixture onto the chilled tart shells, generously layer with colorful fruit, and finally, elegantly drizzle with sweet icing.
