Mixed onion soup with green onion croutes

Green onion croutes pair perfectly with a flavorful mixed onion soup.
Ingredients:
  • 40g butter
  • 2 brown onions, thinly sliced into rings
  • 2 Spanish onions, thinly sliced into rings
  • 2 garlic cloves, crushed
  • 125ml brandy
  • 1.5l beef stock
  • 8 sprigs thyme
  • 1 small baguette, cut diagonally into 2cm-thick slices
  • 4 green onions, ends trimmed, thinly sliced
  • 80g gruyere
Instructions:
  • In a large saucepan over high heat, melt the butter until it foams. Add the brown and Spanish onions, cook and stir for 10 minutes until the onions soften and start to brown. Then add the garlic and cook for 1 minute until fragrant.
  • Pour in the aromatic brandy and allow the mixture to come to a gentle boil. Introduce the stock and fragrant thyme, letting it all come to a gentle boil again. Lower the heat to a simmer and let it cook for 15 minutes, stirring occasionally until the soup slightly thickens. Season with salt and pepper to your liking.
  • Preheat the grill on high. Place baguette slices on an oven tray and toast until golden. Combine green onions and Gruyere in a bowl, then sprinkle over the toast. Grill for 2 minutes until the cheese is melted and bubbly.
  • Serve the onion soup in bowls. Top with green onion croutes and enjoy promptly.
