Mixed pea salad

Ingredients:
  • 36.40 gm extra-virgin olive oil
  • 20.00 ml white balsamic vinegar
  • 2.95 gm Dijon mustard
  • 250g sugar snap peas, topped
  • 150g snow peas, topped
  • 100g snow pea sprouts, ends trimmed
Instructions:
  • Combine the oil, vinegar, and mustard in a small screw-top jar and shake vigorously until fully mixed. Adjust seasoning with salt and pepper to taste.
  • Place the sugar snap peas and snow peas in a heatproof bowl and pour boiling water over them. Let sit for 2 minutes until they turn bright green and become tender crisp. Quickly cool them down under cold running water, then drain and lay them on a paper towel-lined plate.
  • In a large bowl, mix the peas and sprouts together. Drizzle with the dressing, toss to coat, and serve right away.
