Enhance fudgy brownies with a coffee twist, topped with creamy coffee frosting and a decadent chocolate drizzle.
Ingredients:
  • 1 box (16 oz) Betty Crocker™ Delights Supreme Original Brownie Mix
  • Water, vegetable oil and egg called for on brownie mix box
  • 1 teaspoon instant coffee granules or instant espresso powder
  • 1 teaspoon instant coffee granules or instant expresso powder
  • 1 1/2 teaspoons very hot water
  • 1 1/3 cups powdered sugar
  • 1/4 cup butter, softened
  • 1/2 teaspoon vanilla
  • 2 tablespoons semisweet chocolate chips
  • 1/2 teaspoon shortening
Instructions:
  • Preheat the oven to 350°F (325°F for dark or nonstick pan) and grease the bottom of an 8-inch square pan with shortening or cooking spray. Follow the brownie box instructions to prepare the brownie batter, then mix in 1 teaspoon of instant coffee granules before spreading the batter in the pan.
  • Bake for 35 to 38 minutes, or until a toothpick inserted 2 inches from the side of the pan comes out almost clean. Allow to cool completely on a cooling rack for about 1 1/2 hours.
  • In a medium bowl, combine 1 teaspoon instant coffee granules with hot water until dissolved. Using an electric mixer, beat in remaining frosting ingredients on low speed until mixed; then increase speed to medium and mix until light and fluffy. Spread the frosting over brownies.
  • Place chocolate chips and shortening in a small microwavable bowl, and microwave on High for 30 to 45 seconds until the chips can be stirred smooth. Transfer the mixture into a resealable food-storage plastic bag and partially seal it. Cut a small tip from the corner of the bag and drizzle the chocolate over the frosting. Refrigerate for about 15 minutes or until the chocolate is set. Cut into 4 rows by 4 rows and store covered at room temperature.
