Savory veal and pork blend shaped into mock chicken legs, seared and simmered to perfection.
Ingredients:
  • 1 pound ground veal
  • 0.25 pound ground pork
  • 0.25 cup crushed pineapple, well drained
  • 1 tablespoon chopped green bell pepper
  • 0.125 teaspoon paprika
  • 1 cup dry bread crumbs
  • 2 large eggs
  • 1 tablespoon water
  • 2 tablespoons vegetable oil, or as needed
Instructions:
  • Combine veal, pork, pineapple, bell pepper, salt, and paprika in a bowl, ensuring they are thoroughly mixed. Shape a portion of the mixture around a short wooden skewer to resemble a chicken leg. Repeat with the rest of the meat mixture.
  • Place the bread crumbs in one shallow bowl and combine the eggs and water in another.
  • Coat skewers in bread crumbs, dip in egg mixture, and coat in bread crumbs again. Place on a plate, making sure they're not stacked, and refrigerate for 30 minutes.
  • In a large skillet, heat oil over medium-high heat. Brown skewers on all sides for about 10 minutes. Pour in a splash of water, lower the heat to low, cover the skillet tightly, and cook until skewers are fully cooked, about 45 minutes.
