Spaghetti squash surprises as a coconut in this delicious baked dessert, keeping everyone guessing!
Ingredients:
  • 1 cup white sugar
  • 3 large eggs
  • 0.25 cup butter, melted
  • 1 tablespoon fresh lemon juice
  • 1 teaspoon vanilla extract
  • 3 cups cooked, shredded spaghetti squash
  • 1 (9 inch) pie shell, baked
  • 1 pinch ground nutmeg
  • 1 pinch ground cinnamon
  • 1.5 cups whipped cream for garnish
Instructions:
  • Heat your oven to 350°F (175°C).
  • In a mixing bowl, whip together sugar and eggs until fluffy. Add butter, lemon juice, and vanilla and mix until fully combined. Gently fold in spaghetti squash.
  • Transfer the filling into the prebaked pie crust and sprinkle with a touch of nutmeg and cinnamon for added warmth and flavor.
  • Place the pie in the preheated oven and bake for 40 to 45 minutes until a knife inserted in the center comes out clean. Allow it to cool on a rack before serving.
  • Top with a dollop of whipped cream.
