Mock Strawberry Jam

Zucchini mock strawberry jam: Sweet zucchini cooked with sugar, strawberry gelatin, and lemon juice for a unique twist on classic jam - no strawberries needed!
Ingredients:
  • 5 cups peeled and shredded zucchini
  • 5 cups white sugar
  • 3 tablespoons lemon juice
  • 2 (3 ounce) packages strawberry flavored Jell-O®
Instructions:
  • Check six half-pint jars for cracks and rust on rings, and discard any that are defective. Place the jars in simmering water until jam is ready. Wash new lids and rings with warm soapy water.
  • Combine zucchini and sugar in a large pot over medium heat, stirring until sugar is dissolved and mixture starts boiling, approximately 10 minutes. Add lemon juice and gelatin, and simmer for an additional 5 minutes, stirring continuously.
  • Fill hot, sterilized jars with jam, leaving 1/4 inch of space at the top. Remove air bubbles by running a clean knife or spatula along the insides of the jars. Clean the rims with a moist paper towel. Seal tightly with lids.
  • Place a rack at the bottom of a large stockpot and fill halfway with water. Bring to a boil and use a holder to carefully lower jars 2 inches apart into the water. Add more boiling water, ensuring the jars are covered by at least 2 inches. Cover, bring to a rolling boil, and process for 10 minutes.
  • Allow the jars to cool at room temperature for at least 4 hours, making sure they are spaced several inches apart. Press the center of each lid to check for a secure seal. Store the jars without the rings in a cool, dark place. If any jars don't seal properly, refrigerate them instead.
