Delicious chewy molasses cookies spiced with ginger and cinnamon. Perfect for holiday gifts or shipping.
Ingredients:
  • 1.5 cups white sugar, divided
  • 0.75 cup margarine, melted
  • 1 egg
  • 0.25 cup molasses
  • 2 cups all-purpose flour
  • 2 teaspoons baking soda
  • 1 teaspoon ground cinnamon
  • 0.5 teaspoon salt
  • 0.5 teaspoon ground cloves
  • 0.5 teaspoon ground ginger
Instructions:
  • Combine 1 cup sugar, butter, and egg in a medium bowl, mixing until smooth; then, add molasses and stir well.
  • In a separate bowl, mix together flour, baking soda, cinnamon, salt, cloves, and ginger. Add this mixture to the molasses mixture and stir until fully combined. Cover the dough and chill for 1 hour.
  • Preheat the oven to 375°F (190°C) to ensure the perfect temperature for baking.
  • Once the oven is preheated, shape the dough into 1-inch balls, then coat each ball in the remaining 1/2 cup of white sugar before placing them 2 inches apart on ungreased cookie sheets.
  • Bake in small batches in the preheated oven for 8 to 10 minutes until the tops crack. Then, cool on wire racks.
