Cheesy meaty pasta bake - a simpler version of lasagna with mostaccioli or penne pasta.
Ingredients:
  • 2 teaspoons canola oil
  • 0.5 cup chopped red onion
  • 0.25 cup red bell pepper, chopped
  • 1 pound bulk pork sausage
  • 4 (16 ounce) cans crushed tomatoes
  • 1 teaspoon garlic powder
  • 1 tablespoon Italian seasoning
  • 1 teaspoon sugar
  • 0.5 tablespoon ground black pepper
  • 1 pound mostaccioli or penne pasta
  • 0.5 cup shredded Italian cheese blend
Instructions:
  • In a large pot over medium heat, heat canola oil. Add onion and red pepper, cooking until onion is soft and translucent, around 5 minutes. Mix in pork sausage, stirring until crumbly and browned, for about 10 minutes. Remove and discard any extra fat.
  • Combine crushed tomatoes with garlic powder, Italian seasoning, sugar, salt, and pepper in a pot. Bring to a simmer over medium-high heat, then reduce to medium-low, cover, and simmer for 20 to 30 minutes until sauce thickens to your liking.
  • While waiting, boil a big pot of lightly salted water. Cook pasta until al dente for 8 to 10 minutes. Drain; mix with red sauce and Italian cheese blend. Stir until cheese melts. Season with salt and pepper to taste before serving.
